Breakfast Meal Prep with O2X EAT Specialist AJ Fusco from @forkandhoseco: Egg Muffins (2 Ways)

Ingredients:

4 Eggs, scrambled
2 Scallions, thin sliced

Turkey Bacon – Black Bean
1 Cup Canned Black Beans
2 pieces Turkey Bacon
¾ Cup Shredded Cheddar

Caprese
1 Cup Cherry Tomatoes
1 Cup Shredded Mozzarella
¼ Cup Fresh Basil
Salt

Directions:
– Preheat oven to 350*F
– Spray muffin tin with cooking spray to make removal easier
– Pour enough egg to come up about ¾ of the way in each muffin mold
– Bake for 20-25 minutes or until cooked through

Turkey Bacon – Black Bean
– Top with turkey bacon, black beans and cheddar
– Bake for 20-25 minutes or until cooked through
– Garnish with scallion

Caprese
– In a small skillet over medium heat, add a few glugs of Oil
– When the oil is shimmering, add the cherry tomatoes and cover -Carefully shake the pan often. -Cook until tomatoes just start to burst open
– Season with a pinch of salt.
– Top with tomatoes, basil leaves and mozzarella
